This traditional sweetener provides one-quarter of our community's
income, and is the product of a high-energy, month-long harvest
festival where people come from all over the country (including
other communities) to help us bring in the crop. Used both as a
table syrup (try it on pancakes or mixed with butter on biscuits) and in baking or cooking (unbeatable in baked beans, gingerbread, or barbecue sauce!).

There is a world of mustards out there, but only ours is made with Sandhill sorghum, Sandhill garlic, and our own vinegar (made from our sorghum). Our style is spicy, with the heat coming from stone ground mustard seed. Not smoke-out-the-ears hot, but you can feel the tingle.

This medium-hot condiment is made from Grandma Gutierrez's special recipe. While it takes hours to roast all of the tomatillos, hot peppers, and garlic, we think you'll agree it's worth it. This salsa is made without any sweetener and is carefully seasoned with lemon juice, coriander, and salt for an incomparable piquant taste. Great with chips, meats, or beans. |

We spend hours finely chopping hot peppers, then cooking them down in a mixture of honey, vinegar, and salt until we get a gooey relish that's both hot & sweet--perfect for adding zest to any dish. Or mix it with cream cheese for a terrific dip.
